Everybody needs a favorite dumpling shop, and mine is the resolutely no-frills Fu Fu, original Bellaire Chinatown edition, with its slam-bam service and its robust Northern-style noodle packets. I love the lilt of the juicy pork-and-preserved-cabbage dumplings, and the gingered, garlicky pork rolled into stout oblongs and pan-seared to a glaze on one side. Steamed vegetable “buns” or crimped mushroom dumplings, soup dumplings billed as “pork buns,” and handmade noodle soup with pork and mustard greens in a white-peppery broth are all part of the appeal. So are some of the stir-fries, including pork kidney with leek and Szechuan peppercorns, or a glass pie plate full of wonderful Ma Po tofu. It’s so inexpensive you may stare at your bill in amazement.
