This young Memorial startup is a gift in a city that’s short on serious pizza. Owner Bill Hutchinson went to the trouble to train and become certified in VPN (Verace Pizza Napoletana, or true Neapolitan pizza) methods, and he had his traditional wood-fired oven custom built in Naples. It turns out pies with a proud yeasty crown and crisp, thin undersides, graced with simple combinations of good ingredients that don’t weigh the pizza down. The margherita with a fresh bloom of tomato flavor uses mozzarella hand-thrown daily on the premises, and the dough is made every morning, too. Look for daily specials such as a Pizza Bianco with fennel sausage and goat cheese. Don’t miss the not-so-Neapolitan Caesar salad with a sparkling, eggy dressing. The clean, bright room is short on atmosphere, but with no-corkage BYOB you can create your own.
