You can’t really claim to be a Houston oyster fan until you’ve made the pilgrimage to San Leon and Gilhooley’s, a crusty oyster shack just blocks from Galveston Bay. Not everything is worth ordering at this old-fashioned Texas seafood joint, but the Oysters Gilhooley — roasted over a wood fire with Parmesan cheese and garlic butter — are a peak Houston dining experience, not to mention one of the finest shellfish dishes in America. Whiling away the hours on the rakish patio with a cold beer and a hunk of spicy wood-grilled boudin, to be chased with Saltines, you get a deep, salty taste of the way the Gulf Coast used to be before it got all fancied up with city niceties. The service has barroom sass, and a sign admonishes customers in no uncertain terms to leave the kiddies at home. They mean it.
