44. Sylvia’s Enchilada Kitchen
Chef-owner Sylvia Casares’ two west-side restaurants are reliable sources of thoughtful, upscale Tex-Mex. The South Texas native specializes in enchiladas, and among the winners are chicken with a complex tomatillo sauce (the “Mexico City”); ground beef with earthy chili con carne and cheese (the “Lubbock”); and crumbly white-cheese enchiladas “Morelia”-style, in a red-chile sauce with a verdant salad of romaine and radish on top. Fajitas, picamole (a chunky guacamole mixed with pico de gallo) and homey carne guisada are dependable, too. Want a splurge? The mesquite-grilled cabrito al pastor with handmade corn tortillas is splendid.
