In our 21st-century-Creole city, Houstonians’ ritual crawfish feeds increasingly happen Vietnamese-style. This lively Bellaire Chinatown spot takes first prize for its garlicky, buttery boil, shaded with sweet onion tones and jumpy red pepper. (The “regular spicy” version packs plenty of heat.) In high season, the crustaceans are as pearly and sweet as miniature lobsters. Make a dip out of lime and black pepper, order a Tiger beer and party down. Don’t stop there, either: such dishes as the salt and pepper blue crabs, the bo luc lac, the fish-sauce-glazed chicken wings and the soulful, hot-as-hell braised turkey neck all are well worth ordering.
